This is my favourite supper dish, especially for when I want something quick and easy to produce. This recipe is for two people. You will need to buy two lamb chops, a tin of plum tomatoes, two to three courgettes and a packet of cheddar cheese. Fry the courgettes for five minutes on a medium heat, with some oregano or thyme. Then put half the courgettes in a dish, spoon over half the tomatoes, and add another layer of courgettes. Top the dish with more tomatoes and lots of grated cheese. Sprinkle with more oregano and a twist of pepper. Put in the oven on a medium heat and, while you're waiting for it to cook through, grill the lamb chops. Serve the courgette mixture with the chops and a good glass of red wine.
